2 one pound bag of frozen sliced peaches (thawed and chopped small)
1 stick unsalted butter
1 cup brown sugar
½ cup white sugar
1 star anise
2 Tbl ground cinnamon
4 tsp peach extract
1 tsp salt
1 tsp nutmeg
4 eggs (beaten)
6 cups of flour (split in half)
2 tsp baking soda (split in half)
2 tsp baking powder (split in half)
Combine all ingredients except eggs, flour, baking soda and powder in medium sauce pan over low/med heat, simmer until mixer thickens. All sugar and butter should be melted and peaches very tender. Remove from heat and let cool a bit. Remove star anise. Once mixture is cool add eggs and mix well. Combine the last three ingredients into two separate vessels as indicated we are making two loaves. Add 2 full cups of wet mixture to dry mix. (split any remaining wet mix evenly between the two. **There should not be more than a ¼ cup extra to split)Mix well.
Once you put dough into loaf pan top evenly with the cinnamon pecan crumble.
Bake in preheated oven 350 degrees for 35 to 40 minutes or until toothpick comes out clean.
Let cool before removing from loaf pan.
Cinnamon Pecan Crumble:
4 oz flour
2 oz brown sugar
2 oz white sugar
2 tsp cinnamon
4 oz pecans
4 oz cold butter cut into very small pcs.
Combine all ingredients in food processor or robo coupe and pulsate a few times. Should look a little sandy or like little pebbles.
